Its really not good practice because it puts your turkey in a temperature zone for growing bacteria while it's in the oven trying to come up to a safer temperature. It's best to put room temp stuffing in a room temp turkey (just the outside needs to be room temp, not necessarily the inside). At room temp the heat travels faster through the bird and it prevents the meat from contracting (dries out faster if it's a cold turkey in a hot oven). Also, when you temp the bird when it might be done take the temperature of the stuffing in the center and not the meat. In a stuffed bird the stuffing is now the center and will take the longest to come up to 150*f which is when you should take it out of the oven. Good luck with your turkey!
